I made a really cool Legend of Zelda themed Minecraft map on the Xbox 360 version that heavily utilizes redstone circuits and mechanisms in a number of really devious puzzles. The desert temple in particular is really well done...it's actually quite a bit better than everything else, honestly, though I did work on it towards the end. I'm taking about some extensive RSXNOR and memory circuits which guide players from one floor to the next past several interesting traps. You even enter the temple in a manner similar to Grunty Inc. from Banjo Tooie.
The forest temple is a huge tree with platforming sections. The exterior design is a bit sub-par, which is unfortunate.
The fire temple is a gigantic volcano covered in snow and ice. At one point the volcano erupts and changes the area completely.
The water temple is beneath a frozen lake. It has some puzzles related to altering the flow of power and water.
Outside of the dungeons you have around 8+ option mini-dungeon areas which reward eyes of ender (while the big dungeons give end portal frames). The starting town has a bunch of neat secrets and some cool puzzles (some of which require items given in the dungeons). The last town I made is a city in the sky which can only be reached via a massive man-cannon designed to rise out of a mountain.
Unfortunately, it's stuck on my Xbox 360 and I can't work on it right now. I should have just picked up the PC version after getting my new laptop.

Thats a splendid idea. Kinda suprised people take the time to build stuff like that.
