I'm so confused on how to rank this skill. Do you need a score scroll to get a great performance and if so does the rank of the score scroll have to be a rank higher than your playing instrument skill rank like in blacksmithing? And if so can anyone help me with that? Do you need to have a score scroll to help crops grow faster? And how does magical music work...if anybody even uses it anymore. Wiki was kind of unclear about these things, or i just couldn't understand them.

You can just make a one note score that is at least 2 ranks above your playing instrument to rank playing instrument. You can rank it without the score, but it just takes longer.
Successes and great successes are just based on RNG/luck. You have to let it play the whole song to find out what you get though.

Or you can forgo the old way of training it and have two people drop you into the Provocation shadow mission at Taillteann's shadow altar. (3~3 players required)
You can get by ranking the skill doing purely two things:
1.) Attacking things with an instrument (like the walls in Provocation).
and 2.) Using Buff Music skills (like Enduring Melody, Lullaby, etc)
I recommend taking a Mandolin, or other fast-hit, high durability instrument into Provocation and just auto-attacking the wall, then spamming Buff music skills once that's done.
Of course, this is not 100% AFK as you can't auto-spam Buff Music skills like normal old Playing Instrument.
But it sure is faster.
Also for "great" performances, you can also try spamming Playing Instrument over and over, while watching your character.
If your character does a weird animation, as opposed to the normal one, then that means the song they're playing is "great". So keep loading playing instrument and cancelling it until they do the "great" animation.
You can get perfects without a score scroll, but using a Score scroll with a difficulty rating that is 2 ranks higher than your Playing rank will help. (e.g. You have rC Playing Instrument, so you would want a rA Music Score Scroll).
Difficulty of the score scroll is based on the composer's rank of Musical Knowledge, not Composing.

I find the best way to level music would be through "training scrolls".
To make a training scroll place the code "L64r1" in the melody section of a scroll. As Endless mentioned the rank of the scroll can only be 2 ranks above or below your playing rank for it to give you training.
For Ex:
If you have rank D playing; Rank F, E, C, and B scrolls will give you experience. Anything less would be too easy for you, Anything higher will be to hard for you to play.
Upon making the scroll, you can play it on repeat If you click "Repeat Playing instrument."

I'd also like to mention that the skill "Music Knowledge" determines the rank of your composed scrolls. It's best to rank Music Knowledge and Playing Instrument side by side so you can make your own training scrolls.
Anyways your Scroll Rank increases the chances of Inspiring or Great performances which give you more training points than average.

Iyasenu has it right. The best way to train Playing Instrument these days is to attack spikes and spam buff music.
You don't even need to go into Provo anymore. Just start up Saga Episode 7 and during the mission where you're running from the elves and giants, once you pass the third wave you can duck behind a set of barrier spikes and use those instead.
