Tried to dig around on google to see what is the latest official damage formula, but the best I got was a formula created around 2010 and that's somewhat outdated. I'm trying to figure out is it worth it in the far future to try and re-roll a +10 att Encore enchant to a measly 3 ~ 5 more attack.
I wouldn't think a few more attack points matter significantly, but just wondering. Plus, this would be good for future reference.

How much damage it translates out to depends on what skills you're using, if you got a critical hit, and what buffs are active. There is no mysterious "damage formula", just some simple math.

What Nand said.
Aside from magic and alchemy, I'm fairly certain that most damage from the majority of talents are simple multipliers and additions. It really depends on the skill. After you get your damage, subtract defense and calculate protection and subtract.
You could make a master formula, it's just going to be somewhat long if you include all the factors.
([(Skill Base Multiplier + Additive Reforge) * Max Damage(+Titles, +Enchants, + Wep Max Dmg, +stats, *BFO, ect.) * Set Effect(1.15) * Critical (1[if none]/2.5/3.0/3.12) * ele reforge (1.XXX) * any other stuff I forgot] - Monster Def)*(1-[Monster Protection/100])
I just came up with it on the top of my head, so there are probably some mistakes.
Edit: There's also piercing, armor pierce, bhafel huntress, ping, passive def, and a bunch of other stuff that makes the formula stupidly long if someone actually creates it.

Oh really? Huh, I thought there were possibly hidden values other than piercing or prot. Oh well. Thanks for the answers.

I'm pretty sure that's only in magic with the magic attack modifiers as that "hidden value". Then again, I could be completely wrong since I never tested anything outside of magic.

Protection is no longer 1 = 1%, there is a formula but just use this for reference instead:

According to the wiki's stats page, the calculation step order (which is important) is as follows.
http://wiki.mabinogiworld.com/view/Damage#Damage
The final damage dealt on a monster is calculated in the following steps:
1. Base damage plus all additional damages (from enchants, stats except Int, skills)
2. Skill Multipliers (if applicable)
3. Enemy Defense Deduction
4. Enemy Protection Deduction
5. Shield Melee Damage Reduction (if applicable)
6. Elemental Multiplier (if applicable)
7. Passive Defense (if applicable)
