Right now I'm at 79% with my anju shuriken but after vine it should almost hit 100. I want to be able to at least hit the full 30% on every monster. Should I find more critical enchants?

No, you don't need critical enchants at all. Nor do you need critical upgrades.
The will and luck you build from leveling up and rebirthing will eventually give you the critical you need to reach the cap chance.

To give you an idea of how obsolete crit enchants are...
Only fighter skill I have at R1 is chain mastery. Others are R9 and below. I still haven't done magic shields. And I still get 117% barehanded.
If I actually equip my full gear, the lowest crit I get is 142%. 200 crit is easy mode if I rank fighter skills.

What they forgot to mention is that it takes thousands of AP to get any noticeable amount of base critical.
Unless you've already ranked most of your damage skills, you're not going to be wasting AP on luck/will depending on your build.
If you use single target skillsets and normal attacks, enchant for critical first and as you get crit from skills, you can replace for damage. Ideally you want 150+ before overture, but 130+ will do for most content.
If you mainly use AoE skillsets, then just disregard the critical stat entirely.

Pretty much.
Critical is a garbage (gear) stat. You'll find that it's completely useless, end-game. That being said, it's perfectly viable while you're still developing your character. I would advise against throwing critical enchants or choosing critical upgrades on valuable gear. I do advise throwing easily obtainable critical enchants on cheap, throwaway equipment until you no longer need it.
130% critical is a very acceptable amount for Mabinogi (after BFO). That will allow you to max your critical rate against enemies with up to 50% protection, which covers just about everything worth fighting.

Aim for 150%, you should able to reach it with:
a)ranking up fighter skills or will stats
b)luck stats
and c)second title
Being age 10-11 also helps if you are struggling with crit rate. As previous posts said, focus on getting max damage enchants, then slowly work on crit rate (stats)
