So Ive decided I would like to finally try out creating a Giant character, because I really only like the close-combat talents. Problem is, I don't know whether it is more beneficial (stronger start) to start with fighter or just close-combat talents. Basically, I just want to know which (out of those two) I should start off my character.

I suggest doing close combat first mainly due to the use of skills such as smash, windmill, assault slash. Also, you can always slap a lance onto your giant and poke things for some decent damage if you also do Lance Mastery/Charge/Counter. Then you can do fighter if you desire.
Others may have a better suggestion for you, but I think lances are the way to go especially for a giant.

I don't main a giant but do main a Fighter, and I suggest going Close Combat first. Close Combat has CP based training (which you should do as low leveled on your character as possible) and its skills are useful for training and supporting your Fighter skills. Going Fighter first would probably make you stronger faster than doing Close Combat first but I really suggest Close Combat first.
In fact, for most talents, even main Magic, I suggest putting Close Combat early on the priority list.

Warrior for your foundation, Lance to add on that foundation,thhhheennn Ninja or Fighter.Probably Ninja first since it gives you a massive amount of strength and will.

No. If you're really talking about a "huge benefit", you should be looking at Oblivion Alteration Cooking Pot with Max Attack Power reforge.
Wind blast and sand burst isn't really that useful, windmill will do a better job of aggro control.
