I know if you get two of the same homestead stuffs such as 2x Ruairi figure, it won't stack, but what about if you got one of the each item, does the stats from each item stack for being in homestead?

Yes, if you get one of each item, their individual stat boosts will stack.

Only highest stat will apply. So if you have str 2 will 6 figure and str 4 will 4 figure, you will get str 4 will 6 bonus.
