All pop/soda is extremely acidic, given enough time (30 days) it will eat through almost anything organic, the bones are treated like our teeth in this case, drink enough soda and your teeth will rot clean out of your head, it's the same concept. The tail is made of a different substance than the rest of the rats body so it has a higher tolerance to the acidity that's why the tail remains intact.
