So I've really been wanting to get back into Mabinogi, but it's been a little while. I tried all races forms of Archery, but I really never liked it. I really am attracted to Alchemy, Gunner, Fighter, and Close Combat, but Im not sure what to go with if Im starting a new character. I heard that Gunner and Alchemy use stats that must be gained in other talent areas, so would they be really weak to start off with on a new character?
Which of those talents do you think are best, and why? What race should I pick that goes well with that talent?

Giants are naturally the strongest gunslingers and fighters but neither by much. They have unique melee/alchemy synergy with lances + guard cylinders but their melee falls short compared to Humans. Humans are, at present, the king of all trades.

If I really wanted to go into Alchemy, would I be better off creating a giant and eventually getting to the point where I can do Lance + Alchemy, or would I be better off creating an elf, mastering magic, and then doing alchemy?
The reason why I ask is because I have a giant character that is almost Master Close-Combat, but I also have an elf who also almost has Master Magic. Who do you think would be best?

If you really want to have alchemy as a main focus, you might want to consider elf just because they can hide and use hydra. It's a nifty trick.

You shouldn't strain your brain thinking about what will be best, you can play any race and do anything well with the exceptions of giant archery and elven melee. Both elven magic and giant lancing have superb synergy with alchemy so whatever your preference is should be fine.

I personally main an Elf with several thousand of levels invested on it and I would not recommend going with an Elf regardless of what talent you pick. (Elves get more pointless each year as their "advantages" dwindle and Humans shine brighter.) Based on your interests, I would recommend Humans. They're the most well balanced race and as previously said, Giants are better in a few skillsets but not by much, and humans can give you the versatility you'd probably enjoy.

If you are playing a human or giant I'd say rank the close combat skills first before diving into other areas. They are universally useful no matter which skill set you are going to use.
Right now human's are the best choice for close combat due to the changes in the renovation. I'd highly recommend going with it if you like those skills.
Alchemy is a bit of an odd case, it is based on your HP/MP/Stamina, so really as far as a race goes you can pick what you want. I haven't really looked into alchemy for a few years but it has had a few buffs and is quite good now.
Gunner is a skillset that needs a lot of base stats to really shine. It isn't an ideal thing to start with, but if you want to rank gunner you would be best ranking the basic magic and close combat first to get some good base stats. There are a lot of easy INT sources like musical knowledge and the basic magic bolts. For the STR close combat and puppets are good things to look at.
It looks like you want to go alchemy though so out of the 2 characters you suggested I would also agree with elf. Magic is quite a good compliment to alchemy and you probably have quite a high MP base already.
