So I have been playing on my elf, and I started out as a mage, planning to do Str skills after, eventually working my way to Gunner. I've been getting really bored of playing mage, and I now have 600 INT. I honestly don't know if that is good, bad, or if I should just leave it for now and come back to it. Unfortunately, my Str. is actually really pathetic, 70 Str. I really don't know what to do, all the skills that give a lot of Str are only for Humans and Giants, or they take tons of AP just to get a very little amount of Str. Should I just start Gunner now, and come back to the stats once Im done ranking most gunner skills? Or should I just quit this character because Im wasting my time, and just create a human/giant character and do Close Combat?
I was also thinking of just sticking with my elf, and doing Alchemy, because of my high mana? Is that a good idea? What do you think?

Hm, you could always work on some life skills to bump up your stats, Str especially. Doing things like Carpentry and Mining are time-consuming, yet rewarding. They don't take too much ap to rank, and it'd give you more time to decide on what you want to do and you'd be accumulating a bit of a nest egg of AP.
I don't really know too much about Elves, to be honest with you. If you have that much Int already, I'd take advantage of it and try and pursue something that would benefit from it.

I thought elves are supposed to go either Archery or Mage to optimize their potential? Alchemy might be a good thing too, but I don't know anything about that subject, especially for elves.
Elves kinda suck with melee, and one of the only reasons you would do it as an elf is for STR for gunner since they're so limited. Later on, you might be able to optimize Bash and FH, but for now I wouldn't bother.
Gunner is one of those "mid / late - game" kind of classes because if you don't have the INT and STR to support it, you might as well be using the close combat class instead.
From my brother's perspective (who's an elf) he feels like elves are getting screwed because they can't dual wield, and the archery revamp coming up kinda sucks. If it's not too late, maybe you should consider a Human or Giant. That's just my opinion though. I'm sure I'm forgetting to state the advantages of elves other than their walking speed.

There's really only one way Elf beats the other two races, and it's archery... and some people may argue that's not even the case.
With optimal connection and good enough damage and reforges, elf magnum shot is the highest DPS possible. Whether or not that is worth it is up to each player.

Combat mastery may be a bit lower for elves, but still worth, and Windmill is still a must.
As stated above, carpentry and mining are very AP-efficient, and Rare Mineralogy is another efficient yet grindy strength sink.
Dischord has a nice gain fairly cheap, and most of the Ninja skillset provides a lot as well (plus tons more in the talent title).
I don't know what your will is like right now, but as a human life/mage/gunner with zero fighter skills, I still used Ninja as a huge way of buffing my str up.

I really don't suggest quitting on your main just to make another main as that's more of wasting time than what you currently have.
I suggest still going close combat first as you'll thank the hp and tankiness later on, and although it may not be high as humans, it cost less ap for elves.
