Fate/Stay Night: Unlimited Blade Works
So far I think its interesting to say the least. I think attaching the tsundere-ness was cute, but mostly I'm quite interested in the build-up of the characters.
My only gripe is the pacing of the characters. They get introduced for one episode and aren't seen again until later, in which then they are killed off. That's pretty tragic and its kind of treating them like filler people.
Also, Fate/Stay Night was originally an eroge? As I continue to watch this I can't imagine the series as adult content...

Fate/Zero:
The first opening is amazing, and I appreciate that the characters had a more important role and weren't killed off at a fast pace, and pretty much almost all of them were memorable. The ending, however, was extremely tragic and saddening; the good guy actually lost and despite his heroic intentions ended up causing mayhem in the end, and loses all but one thing; the bad guy actually "wins" this round, finally not going the traditional role of "good guy always wins".
It's a pretty great series and I have to say it performs better than Unlimited Blade Works; one primary antagonist who survived Fate/Zero died abruptly fast and in a pretty anti-climactic way, and I find that rather dull.

Carnival Phantasm:
It's interesting to say the least, as humorous as is its for a spin-off. Surprisingly everyone stays in-character so it does feel like a true Fate/Stay Night series.
Also poor Lancer, dies in almost every episode.

Fate/Stay Night: Original:
At least they don't kill off the characters at a speedy pace unlike Unlimited Blade Works, though the importance of roles of the side characters seemed to be reversed. Some of the characters have more interactions and show scenarios that weren't present in UBW (such as Saber's insatiable hunger and her love for lions) and Illya is cute, despite her yandereness, along with Shiro x Saber. The writing is rather short but very concise, unlike UBW which seemed rather excessively long in its first two episodes.
However, the original does seem to show a lot of contradictions compared to the future works of Fate anime, although the original is pretty old. For example, Archer's downfall though was rather quick and somewhat disappointing compared to UBW; even though he outright stated his goal and heavily implied his identity, all that was left unfulfilled, reverted back to the very thing he was against, and died. Pretty unusual to play hypocrite in a last stand.

Um... It's differently stylized to be more... um, Kawaii... It does get increasingly lewd in the second and third seasons...

Basically, it's a tradition in Japan to add adult scenes in random places to your game. And I'm being serious here. Although it's semi-justified in Type Moon universe, as sex is a way of transferring mana there.

... Wtf, that's the most bizarre writing I've ever seen in a sex scene.
And yeah, I can understand sex being used to transfer mana and such. But it really is so... random. Maybe I'll have to play the eroge to understand it better.
EDIT: I see, in the original Fate/Stay Night the protagonists were being... lewd. I sort of get a better grasp at how sex fits in despite its randomness.

Is there any more Fate anime other than the five? Prisma Illya is currently on its third season, and there may be a Stay Night: Heaven's Feel in the future.

There is UBW movie from 2010, but unsurprisingly cramming a dozen hours worth of story into 100 minutes didn't work too well. Two good things I can say about it is that it looks good and continues the tradition of censoring H-scenes with random 3D animals.
Also, there are TONS of spin-off novels, manga and games (you might wanna take a look at
this page). They are milking it really hard, while Tsukihime remake is in permanent soonTM state D:
And yes, Kaleid Liner was born as a simple parody of F/SN and magical girls shows (most notably Nanoha series), it keeps on getting darker and edgier with each new part. Hopefully no heart-ripping will be involved.

I though it was mostly because in one of the ending on Hollow atarixia, I think Rin became a mahou shoujo

Yup:3 I might not be a huge fan of fate series, but I absolutely love this particular show.

Why yes, HA is where Kaleidosticks and magical girls come from. The game itself however is pretty much a parody (or psychedelic mumbo-jumbo that happens after all f/sn endings simultaneously and still remains canon to be more precise).
