That depends on how you like to fight mostly.
Some people like to zero shoot, so fast short range bows with high critical/damage work well for them. Like Elven Short Bow (highest dmg/crit upgrade, or range upgrade for quicker aim), or Short Bow(max crit upgrade).
While other people play it safe and like to have long range slow shooting bows that have a bigger stun time.
Leather Long Bow(Max Damage Upgrade 190 prof path) is the go to bow for novice archers.

Start with the Leather Long Bow and work up to the Long Bow and Elven Short Bow. The Wing Bow (crit path) is the best upgraded bow while the best spirit weapons are the Ring Bow, Wing Bow and Leather Long Bow.
The Composite bow and the Crossbow have their fans but the later exist only among Humans.

There's a stat called Protecton that reduces the Critical rate of whatever you're targeting. For every 1% Protection the target has, it will reduce your Critical rate against it by 2%.
So if a monster has 20% Protection, not only will your dmg against it will be reduced by 20%, but your Critical rate will be reduced by 40%. You need a 41% Critical rate to have a 1% Critical rate against the monster with 20% Protection; 70% Critical rate to have 30% Critical rate against the monster with 20% Protection.
