Like in mabinogi how you could get refining and the rest of those skills in the set to make armor and weapons that was way better than the ones you could buy from npcs.
It seems now that anyone can make anything as long as they have the materials but will it always stay like that or in the future will players be able to craft superior weapons and armors to sell on the market? I would love to play a mmo where instead of focusing on all of the fighting and stuff I could focus on running a service and make some in game money.

Maybe the quality gets be better if you have a higher skill level or something... Or NPCs can't craft higher leveled equipments...

You can see different armor's grades in the Marketplace, and I assume you would be able to get higher than 2 stars by having it crafted.
