Falcon = A normal size falcon that turns into a giant one when the elf transes
Giant = a monkey that turns into a gorrilla when giants trans o3o

An elf could have a falcon or crow transform into a slightly larger awesome looking bird with pimped out feathers and whatnot. o3o
A giant could use bears. Dunno how they would look though. :/

Also, when's the last time you actually saw a transformation pet put to good use in high-end combat?

^This^ Most logical one I've seen, the shire/thoroughbred could have armor made of feathers, maybe a special feature where the Falcon Elf can't be knocked off when mounted?
The bears could have....hmm, similar features to the Savage Beast (markings on the fur, decorative parts [like the material or w.e you see on Savage Beasts). Not sure if they should be enlarged or not, I'd say just leave them. Especially the polar bear/panda (as they can be giant sized anyway). For a special feature...bear version of Full Swing? Lol...how about a roar similar to Griffin, but actually stuns and inflicts damage?

When a pet is trans'd it does make a difference[SIZE="1"] even if it is slight[/SIZE]

how so? a mount would make sense for an elf because they can arch off of mounts...
