Most people go for higher durability first, then choose depending on what types of mobs they fight.
But truth is, in Mabinogi, Protection doesn't help so much, unless you got tons of it.
I say go mostly for Defense with some Protection.

Armor Upgrades - Mabinogi World Wiki
Go to the Focusing on Durability for Heavy Armors.
The 190 upgrade path has the most durability and decent Def and Protection.
I'd choose this, IMO.

If your armor already has good Dura, focus on Defense or Protection.

The other thing is that some upgrades take away durability, for example the highest defence route takes away 8 dura.
What I think is the best combination for Defence is Defensive/Oak (you need to rank Final Hit) or Defensive/Rock (you need to rank Summon Golem) along with a high dura armor with 210 upgrade (best defence). I'm using defensive/rock right now.
Of course, you can enchant PD armor with those but you will really need repair protection and enchant protection potions to have it go 100% smoothly.
It goes like this:

Protection seems to be more important in PVP battles. In regular dungeoning, you will want high defence though.

and prot also lowers the chance you can get critted so thats another plus.
but if you are going to dungeons with a lot of multis like fiodh int and alby int, you probably want more defense.

The stats of your armor are largely unimportant. Any "decent" equipment will be enchanted with offensive or defensive properties. The enchants placed on said armor are often extremely difficult to obtain, expensive or both. Durability means that the millions your poured into your equips last a bit longer. Adding 10 durability is far more useful than a point or two of defense/protection, unless you're running a highly defensive build (like mana master).

This. Every protection point lowers the chance of you receiving a critical hit by 2%. When you get to go to higher dungeons and missions you will notice monsters will crit more often... I don't know how damage calculation works but, ie a monsters hits 1-8 on you, but when it crits, you receive a full 40-50 damage hit.
Defense is "easier" to get from enchants (Rock, Defensive, Oak Tree, Burgundy Bear, Imp, Rigid, Captain... on top of my head) compared to protection. Equips will often have reduced protection if they're low quality (like 6/2, 6/3 Val or Dustin and unsigned Vambraces). So I would recommend the protection route.
