Basically a very strong one hit smash and objects like large rocks.
Fiona's counterattack for example, is very good at breaking pieces off bosses.

Heavy objects, such as rocks/boulders do a pretty decent job.
For Fiona, Counterattack and dash smash is very effective.
Dash smash works well against almost all bosses, except Polar Bear. Its a tad bit weaker but if you can do the heavy stander cancel and get multiple hits in, you should be fine. I almost never spear for breaks anymore, except for Polar Bear and sometimes Gnoll King.
Gnoll Chieftain: Dodge his swinging attack, and dash smash into his helmet. It shouldn't take more than a few hits to get a response.
Polar Bear: Use the large ice chunks. Its super effective.
Sturdy Emuloch: Counter spam from the right side, or just dash smash his shield. Easy enough.
The Knight: Counter spam from his blade's side.
Blood Prince: Counter spam from his blade's side.
Goliath: This is easiest when you go with two people. Have one person distract it while you dash smash the crap out of his right leg from behind.
Gnoll King: Spear his face when you he recovers from stun. Otherwise, dash smash his face after he finishes an attack.

As a spear lann, I know you can just roll into Emuloch's shield to break it off. For most things though, you have to be lucky and land a gliding fury on the you're trying to break.
As a sword lann, you can just double crescent most things off.

Not only heavy objects. Any object will do. I've hit a break-off using one of those weak pot things that you can hold in 1 hand.

So I just got to the Gnoll King and is having trouble with his mask. Any tips on breaking off? I only got it once when he got tired, but he died quickly after that.

I like to wait till he does melee attacks, then aim up at almost point blank range and just shoot really fast.
Since you're so close, it's really easy to hit, even though you don't really aim.
Your next best alternative is to side-step his axe throws and shoot at his face at those times, but I don't like doing that, since he tends to throw multiple times in succession.

As said above, you can use dash smashes and heavy objects if not spears. If You're a Fiona then you can also use Counter Attack and SP Shield Bash. Shield Bash works really well if you're trying to knock something off and don't want to finish off the boss. You just block until you have enough SP for the Shield Bash and then use it when you feel you have a good shot at the break off.
