IVs are Individual Values. You can kinda say that it's a pokemon's proficiency in a stat, with 31 being the highest and 0 being the lowest. Generally speaking, you may have a Salamence with max Attack EVs, but if it has 0 IV in it, it's useless as a sweeper due to very poor attack.
EV are Effort Values. They're numbers for each stat given to each enemy pokemon, and when said enemy pokemon is defeated, it gives the pokemon that participated in the battle with it EVs. You can say that for every 4 EVs given to a pokemon in a certain stat, that stay 'levels up'. The max amount of EVs in a stat is 255. Max amount of EVs a pokemon is allowed to have is 510. EVs are not given when battling other players. There are items that can increase a pokemon's EV by 10 to a stat depending on the kind of item. There are also items that work in reverse.

There's an IV calculator. I've no idea if it's accurate or not. As to finding out current EVs, you'd probably have to use a cheating device or something similar. Alternatively, you could not give a damn, give them reverse EV berries, and start EV training them that way. There's not much of a point to EV training though if you're just playing ingame. It's important beyond words in metagaming though.
Also, EXP shares gives the other pokemon the gained EVs and Macho Braces double the EVs gained.

Frankly I always go D'AWWW when I see it's cute little ears move and that happy dance he does too! I named mine Lucky*Star and his ability is Victory Star which is very fitting.
Oddly enough, Victini has always brought me great luck when catching Pokemon for some reason. He's my prized pokemon and by far my favorite.
