I'm sort of leaning towards Weaving for some reason.

Refine wants you to have low dex while Weaving wants you to have high dex.
If you didn't know, low dex tend to come before having high dex.
If for some reason you just want to do extra work, you can do Refine with high dex and Weaving with low dex. Not impossible, but it does requires more effort.

and will probably drive you to considering suicide.

I have medium DEX (I think), with only about 130.
Only reason I don't want to do Refine is because it's beyond annoying to get ores...
I really hate Metallurgy.

You don't neccessarily have to Metallurgy for ores, you can pay someone to do it, or even just buy the ores for like 1k per stack from Dunbarton Personal Shops. Ore prices have dropped severely, so it shouldn't be much of an issue. Unless you're insanely poor and lack the motivation to make any money at all to buy them.
Weaving needs higher Dex, but if you skip Refine, it'll ne nearly impossible later. Doing Refine later with over 200-300 dex is like doing Weaving with 0 Dex. You'd only be able to do so many failures at 99%.
In addition, you're missing a lot of Dex if you miss out on Refine. I'd say it's one of the most easiest skills out of all your life skills that you're going to end up doing. If you're hating Refine now, then you'll hate the other life skills more later on.
And what kind of motivation is that?

weaving with all your mats before hand then spam the hell out of that potion.

Refine. Store the mats.
Weave. Store the mats.
Have lots of everything.
CONQUER blacksmithing.

Refining then weaving. :3 if you want dex you're definetly going to have a hard time failing if your dex is too high when it comes to refining.

I did both at the same time.
Get bored of one, do the other.
Refine is easier so you'll probably finish refine first.

im doing refine atm with only 88 dex the hard part is getting past the locked doors to where the ore is as im only a combined lvl of 52 ugh
still takes soooooo much refining to get anywhere in the skill tho like 4 trips of a full inventory of ores to get it up once
i use (and break) 1 n a half pick axes each time i go in aswell lol
but repairing is so cheap for the mari dung where the ores are at so not complaining and simply paying for the use of a furnace is better than choping fire wood so the runing around time for refining is pretty small really just gotta live there

My first Metallurgy trip - 36 Unknown Ores, 4 Iron Ores, 3 Gold Ores, 16 Mythril Ores, 1 Silver Ore
Which explains why I hate it.
