Because the game depends on actual skill, a second sword isn't so easy to use. Sure, it looks cool on the big screen, but how many traditional swordplays include using two bigass sword at the same time?

Believe it or not, the game does require actual skill to dual wield, as in real skills or experience, which Kirito has over a year worth from SAO. But again, the anime refuses to mention something incredibly important, and it's that anyone in ALO can dual wield, but they simply choose not too because they all suck so bad at it that it would lower their DPS/DPM rather than increase it, so you won't see anyone attempt to.
It was already mentioned that athletes are superior or gain an advantage in the game because of their experience over people who don't do shit. So basically, Suguha can use her kendo swordsmanship in the game.
I think I remember reading in the novel the explanation why people didn't dual weild much in ALO. Suguha had said something about the difficulity of weilding two swords so most people only went for one sword as it was easier to handle attacking and defending.

Everyone else wasn't in SAO, so they don't know the death penalty of dying in game. In ALO it doesn't matter if you die, you just respawn in your hometown. Why does that matter? you can fly. Yet theres a big race to get to the tower and fly permanently. Who cares if someone makes it to the top? Just make a new character with the race that got there first.
From what I understand in the story that isn't exactly correct. Let say the Salamanders got to the top. All current Salamander acounts will be reborn into that White wing Race that has infinite fly.
New people who choose Salamander will not be able to turn into that white wing race..
