Shonen Jump is cutting off Kubo Tite by allowing him to end the manga early
they do this with every manga they don't want to keep

Kubo's plan was to end the series after Aizen.
Shonen Jump forced him to do a continuation. You can't just bail out of a series whenever you want. When the series ends is Shonen Jump's call. Your series becomes their ***** once you're contracted in.

Something I learned from Bakuman is that a lot of the time, authors can't end the series when they want, the way they want, particularly in jump. These series have gone on for way too long, though. So long that I stopped caring. I hate stories that don't end.

I don't know why Jump would want to cut it either. Doesn't Bleach sell well in Japan? I know they make a whole bunch of figures and games for it, just like Naruto and One Piece.

Bleach has actually fallen quite a bit in the rankings and lingers in the lower of the top 10 digits. To be honest, even though there is much to explain and much that was foreshadowed before, the series is really pushing it at this point. The latest arc about fullbring was a cannon filler no matter how you look at it. Ichigo losing his powers was supposed to be the end of the series, with a few extra chapters to wrap it up, according to an interview with Kubo.
Naruto seems pretty close to an end as well. He practically became Jesus in the last chapter and after bashing fake Madara to the ground he'll face off with Sasuke and end the series.
One Piece still follows a straight line of plot, where everyone can safely assume it is about ~75% through with the series.
As far as One Piece goes, they couldn't POSSIBLY cut it off. Look at the sales for 2011.

One piece holds more sales than its following ranking mangas... combined.
I'm not a huge fan of it, but there is absolutely no doubt with these numbers that One Piece is THE manga of mangas.

Though, what confuses me is, you say there was an interview where kubo said he wanted it to end after Aizen, yet at an event for Jump, he had said he wanted it to run much longer. Unless BOTH are true and the next arc will be very long.
Regardless of what's happening, if it ends I'm going to be disappointed unless they reveal certain things.
Also, I'm well aware of One Piece's status in Japan. I'm just still surprised that it's still going on...

Just that I'm wary of long stories that never seem like they're going to end. At some point I just stopped caring about the bajillion characters in Naruto. Never really got into Bleach, and now I'm glad for it. Way too long.

Theres quite a bit of detail and consistency that Kubo somehow pulled throughout the chapters that explains in a roundabout way that Aizen just had his bankai kept on permanently at all times.[/SPOILER]

Bleach stopped really going anywhere after Soul Society. There's so much left to explain, true, but that has less to do with Kubo having a story to tell and more to do with him not being equipped to add substance to the style. In other words, don't expect closure even if he did get to properly finish the series, because there is none.
What Kubo actually said about wanting to continue the story is more along the lines of him not knowing what he has in store for the story, but that he'd continue for as long as the fans wanted it. Basically "I had no plans for this, but if you keep giving me a paycheck I'll keep drawing cool-looking pictures."
Oda, on the other hand, has known exactly where he wants to take One Piece from the beginning. During the CP9 arc, he commented that the story he wanted to tell was barely at the halfway point. The major points that need explaining from his story aren't abandoned or forgotten and always come back in the most unexpected ways. Even minor details become major later. Of the Big Three, One Piece has always been the most focused. At most, there are a couple minor plot holes here and there but mostly everything gets addressed sooner or later. Yes the story's long, but that's because Oda has so much he wants to tell, rather than him just milking his popularity for all it's worth like Kubo. Unlike the other two, his time skip came along because it was time for one, not because he had run out of ideas and needed a fresh start.
Kishimoto did his time skip for Naruto most likely because he wanted a reboot and had no idea what he wanted to focus on before the skip. The difference between him and Kubo being he actually did start developing focus after the time skip. That doesn't necessarily make the story good, but it does make it better than it was. Still, there are quite a few plot holes and abandoned plot points that will not be addressed no matter what.
