What Kubo actually said about wanting to continue the story is more along the lines of him not knowing what he has in store for the story, but that he'd continue for as long as the fans wanted it. Basically "I had no plans for this, but if you keep giving me a paycheck I'll keep drawing cool-looking pictures."
Oda, on the other hand, has known exactly where he wants to take One Piece from the beginning. During the CP9 arc, he commented that the story he wanted to tell was barely at the halfway point. The major points that need explaining from his story aren't abandoned or forgotten and always come back in the most unexpected ways. Even minor details become major later. Of the Big Three, One Piece has always been the most focused. At most, there are a couple minor plot holes here and there but mostly everything gets addressed sooner or later. Yes the story's long, but that's because Oda has so much he wants to tell, rather than him just milking his popularity for all it's worth like Kubo. Unlike the other two, his time skip came along because it was time for one, not because he had run out of ideas and needed a fresh start.
Kishimoto did his time skip for Naruto most likely because he wanted a reboot and had no idea what he wanted to focus on before the skip. The difference between him and Kubo being he actually did start developing focus after the time skip. That doesn't necessarily make the story good, but it does make it better than it was. Still, there are quite a few plot holes and abandoned plot points that will not be addressed no matter what.
Which is why One Piece is my favorite manga.
