Wouldn't this mean that magic is somewhat better in terms that it ignores protection, seems like they are trying to [secretly] buff magic by nerfing the other skillsets with the more need of DEX.
Magic doesn't ignore protection. Magic ignores protection in regards to critical. Think Windmill. That's what people mean when they say "ignore protection." And even then, it's the intermediate spells, blaze and meteor swarm, not all of magic.

What's the point of giving us a defense piercing stat if they just buff the monsters to compensate us getting said stat?

Yeah. Basically if the attack is AoE, it ignores protection to calc crit. If the attack is just splash, it still takes protection into account

I ranked all puppet skills on the 100 prot sandbag puppets during puppetry event.
Every single one of them (besides act 2) had all their critical hit requirements fulfilled every rank. Act 2 was the only one that did not crit a single time.
Sorry, only Act 6 then.
What DevCat is doing is changing the whole system in order to have future growth.
The combat evolution was a prep for that way.
What do I mean?
If you have 2 skills with both load time at 2 seconds, then obviously you would always use the skill that does higher damage since both skills have 2 seconds load time but no cooldown.
When you allow skills to load instantly and add a cooldown, player are more inclined to use both skills and adjust their gameplay around the cooldown.
Splitting up defenses and tuning protection to a number will help generate more monsters in the future. Their plan is to introduce more variety of enemies and most likely introduce us monsters who will be able to pierce defense/protection or bypass mana shield altogether or even make monsters more versatile.
The key point is that devCat pretty much recognize that content needs to be changed in order to grow, almost making a completely new game.
However, whether they are handling it well or not is up for us to see and to decide.

Devcat loves inflated stats because they encourage e-peening and make min-maxers happier even if nothing actually changes.
Give players more stats through talent system? Enemies have more HP!
Give players more defensive stats? Enemies do more damage!
Give mages 4x more magic attack? Change formula so it takes 4x MA to do as much dmg as before!
Give players defense pierce? Buff enemy defense!
Give players more lance piercing? Lowering protection is less effective!
I could go on forever with everything devcat does to inflate things and not really change anything...
