Don't worry, this is the last arc of Bleach. Anime stopped airing, but the manga is still going on.

Bleach has been pretty great in this last arc. Lots of mysteries are coming to light. The funny thing is, a lot of hints were dropped in earlier chapters. You guys should go back and read some.
[SPOILER="Spoiler"]In one where Ichigo goes into his inner world looking for "Zangetsu" only to find his Hollow self, he keeps asking him where Zangetsu is, and Hollow Ichigo says a couple times, literally "I AM Zangetsu!". At the time of that chapter, I doubt anyone took it at face value for what it was.
A lot of Uryuu's inner dialogue in the earlier chapters seems to indicate he knows something is weird with Ichigo's powers, and even Byakuya comments on how strange Ichigo's Bankai is when he first uses it.
Ichigo lost his powers in the fight against Aizen in a similar method to how Uryuu, a Quincy lost his powers with Letz Stil, and regained them in basically the same way (being stabbed by the heart with a Quincy arrow, or in Ichigo's case a glowing sword). Ichigo only got his Mugetsu technique when "Zangetsu" merged with the Hollow. That way "Zangetsu" merged with Hollow Ichigo also was very reminiscent of the Sklavrei thing Quincies do, which was shown later by The Jail guy in Hueco Mundo. This and the above have been hinting at Quincy powers.
Unohana being the first Kenpachi was planned as well. One of the data books mentions how she's a master with a sword. Kubo has "theme songs" he picked out for a lot of his characters, and strangely there were two songs for Yachiru. One was bubbly and obviously for pink haired Yachiru, the other is quite menacing... For Yachiru Unohana.

I can see why a lot of people think Kubo just makes shit up as he goes, but, too many things fit together too well from hints dropped too long ago.
Also, just because something is popular doesn't necessarily make it shit. Though I guess since Bleach's popularity has waned immensely because of the Arrancar arc's terrible pacing and the terrible Japanese reception of the Fullbring Arc, Bleach's quality should be better because it's less popular now, under that logic.
Bleach isn't the best thing since sliced bread that's for sure, but it's a far-cry from being badly written. Except in the sense that the pacing is horrible, I will admit that.

If it were just pacing that caused the ill reception, then no shounen series would ever be popular. There's only one mystery I care about. Alright, so everyone in Soul Society flipped their shit when Ichigo fended off that giant execution weapon when Rukia was about to die, right? Then, during the Arrancar saga it was revealed that half of the people Ichigo beat were holding back huge chunks of their power (Arrancar-killing power,mind you) that they could have used during the Soul Society arc because reasons. Why? By the way, not wanting to be the black sheep of one's division does not count as a reason.
Kubo is good at building suspense and showing "cool" scenes, I'll grant you that. But his payoffs aren't all that great and no one has forgotten Inoue "Kurosaki-kun" Orihime, who had one of the most powerful abilities in the series but none of the follow-through to use it and also healed enemies while knowing her allies were coming to rescue her. What was meant to showcase her strong sense of empathy only came around to make her seem very shortsighted and idiotic.
People say One Piece's pacing (the manga) is just as guilty as the other two's but I vehemently disagree. The longest any arc has taken has been a year (less than 52 chapters due to breaks) and it doesn't take 90% of the storyline before key clues get addressed. Just about everything comes full circle sooner or later; there are very few plotholes in the Oda-verse.
Shounen as a genre has many tropes that can turn people off, but it also can really get the crowd going, which is one of its focal strong points. It's not pacing that bites Kubo in the ass. It's usually character inconsistencies and plotholes that do, and most people got tired of waiting. As a shounen series, it falls flat in the long run. Saying "it gets really good in the final arc" when just about everything between then and Soul Society hurts to read is...

The reason why Kenpachi is so inconsistent with his power was explained by Unohana as his own mental barriers holding him back. This is consistent with how we see in SS he cares about the battle, and lives for the battle. He would limit himself with bells and a reiatsu-sucking eye patch, but then later on he stopped using them. Or how with Noitora he started to use a kendo stance instead of just swinging his shit everywhere. Ichigo beating him was because his power back then was constantly fluctuating, he's always been very powerful.
Ikkaku holding his bankai back was stupid on his part, but in regards to his character he'd rather die than let people see it. It's pretty stupid, but that's just how he's felt in the manga. If Ikkaku would have used it, Ichigo might have lost, but he didn't because of his stupid little secret. On that note, Yumichika kept his shikai secret because of the nature of his squad being melee-based. They all hold that kind of "kidou sucks" mentality because of Zaraki, how they all look up to.
Byakuya has remained fairly consistent with his power. Like I said, Ichigo was always very powerful. As a matter of fact, he showcased more of his powers in Soul Society than he did in Hueco Mundo or in the Fullbring arc.
Though with all this, "power levels" in Bleach aren't as significant as other shonen. It's usually broken as hell powers in the right situation like Izuru's Wabisuke (which helped him kill that one fraccion in Fake Karakura Town fairly easily, while he got one shotted at the new arc because he had no opportunity to use it) or Aizen's Kyoka Suigetsu that seal the deal in the battles. You can just look at when the Rose and Love jumped in to help Kyoraku with Stark. Stark was steam rolling them alone, but an ambush from Kyoraku and his broken powers are what killed Stark, not power levels.
I agree with you on all counts with Orihime. Ulquiorra mentioning the whole "mental cages" thing was one thing that Kubo did not follow up on at all, and Orihime in that whole arc had sloppy character development despite that it was focused around saving her...
When it comes to things getting addressed, it's mostly about Ichigo as a character, because Bleach is heavily focused on it's characters. He's not the type of person to ask questions. Numerous times characters have called him out on that. "what you didn't notice X all this time?" like Aizen and more recently "Zangetsu" in the latest chapter. I feel Ichigo not asking questions makes the reveals that much better because him not addressing them hides information better, and as a result the reveals are that much more satisfying.

I should mention that it's bullshit that Ichigo is a Shinigami, Vizard, Fullbringer, and Quincy. No matter how Kubo tries to explain it, he just pulled it out of his ass. =_=
