In regards to dieting:
I've been on a Meat, fruit, veg and nut diet for a few months now and i've lost over 40 pounds (20 kilos). That's without doing much exercise - if I did so, I could probably lose weight a hellva lot faster.
It's not about the type of food you eat, it's about the kind of food you eat and how you prepare it. For example, cooking your own meat patties with your own seasonings (garlic, carrot, mixed fresh spices and herbs, etc) is a hellva lot healthier then going and buying a cheezburgur. Same with fats and oils - ones found in avocado are really good for you, even though it's still labelled as "fats and oils". If you go out and just drink a jug fulla cooking oil you're going to explode and die, though.
So it's really the laziness that gets the better of people, and something that the fast food chains thrive off. If you bother to cook your own food and do it right you'll be so much healthier and feel so much better for it.

It also depends on how much exercise you do, and your metabolic rate.

I've never looked into the specific metabolic rates of different races - I've had much better things to do, such as taking a dump while reading doujins.

You aren't necessarily born with your metabolism. There is a genetic influence yes, but consistent diet and exercise has more influence on your metabolism. Your body adapts to your current intake and use of energy.
