I'm finally starting to get used to things again. I'm a close combat warrior who has R1 Critical hit, Smash, Rank 1 Ranged Attack, Combat Mastery, Sword, Windmill. Final Hit and Assault Slash is sitting at R3... I feel like it's time for some Life skills. I have Refine at Rank 1 and I'm considering either Carpentry or Weaving and just grinding it to rank 1. Does anyone else have any other suggestions to make me stronger in the long run?
I plan on rebirthing today into one of these talents just not sure which one yet.

Step
1) Consider to raise either STR or DEX stat
2) Look
here for all the skills that will give you that certain stat
3) Choose a Talent that will benefit the training of that skill
EDIT: to properly answer your question, it seems that you're in the melee category at the moment. I would consider raising STR, which is boosted by Mining and Carpentry, so either talent would be acceptable.
Just a fair warning that carpentry will take you a while to rank, so make sure you're prepared well. Mining, on the other hand, can be ranked to 1 in a day.

As a normal melee user, I found working on lances to be a much more enjoyable way to gain STR than carpentry.
(Talent STR bonuses as well as the skills themselves.)
Little bit of mining too since it's not terribad like some production skills.

Lances is a good idea, never thought about that one. I did at least decide not to do weaving for the time being, it seems like I need more strength to do actual damage before i branch myself and do weaving stuff... I can see mining being useful but not sure if I really want to do it all within th ehour, seems like a waste of a rebirth. So i will either go for continuing my melee skills or... preparing for carpentry.
Is there anything I should know about carpentry to be better prepared for it?

Have a Woodworking Plane with Carpentry EXP 2 and respective talent.
Always craft bows on Monday
You might want to hold off on Carpentry for a bit since you'll need high-rank Weaving materials in later ranks.

You're still gonna have to do carpentry at some point. Might as well just get that out of the way.
But yeah, do mining, it's easy enough to finish in a day without talent bonus.
You can also have high rank weaving friends for higher carpentry rank. Ranking weaving just for carpentry seems more of a hassle, it should really be the way to boost your dex.

It's relatively annoying to continuously ask the person to create the materials as required for both the person asking and being asked for the favor
But if it's just for carpentry, it'll be possible to just stock up on Thick threads and have a friend make tough strings in one go...

You don't need whole lot of them to begin with.
Hence why I said ranking weaving just for carpentry isn't worth it.

Eventually I will need to dex. For balance I guess? Especially now that i picked up heavy armor and apparently it splits your damn dex in half. I will go with either carpentry or weaving and just yolo.

Depends on your weapon loadout. For examples dual wielding swords...

Sword Mastery R1 appears to gives +15 balance
per sword.
Combat Mastery R1 gives +15 balance too, but I don't know if it's bonus is once or added per-sword.

You bring a good point Rydian, my balance is also at 80 thanks to sword mastery and combat mastery. I will pump up the damage and go for carpentry. Mining, and then weaving.

The chance is, OP won't stay melee forever unless he's a giant. For a human, you really shouldn't be wearing heavy armor at the end as it will cripple your other skillsets.
That being said, dex is still an important stat to get.
