Another reason for ranking blunt mastery is because it allows you to get benefit from the Ambush enchant, which is a really cost-efficient and one of the best suffix you can get for clothing.
To answer your question, here's what each races "excel" at:
Humans: Puppetry. They have the highest str+dex combination possible, as well as their gears generally trending towards ultimate hybrid gear, allowing them the most damage gained damage from sets possible. Granted, and elf or a giant still can use encore champion armor, but they would be missing out on the effect bohemian/thames has to offer, which is more significant later on.
Giants: Melee, fighter, gunner. Giants have the highest str possible, as well as will, not to mention that giants also have the highest will growth rate possible. However, do note that fighter will not be your main skillset and will be your tertiary. As for gunner, giants do have the upperhand, but the damage difference isn't as significant other classes. That is because every race gets about the same amount of int, and while giants do get large amount of str, the damage bonus from that amount is miniscule because guns have terrible damage per str ratio, and that's why it uses two stats instead of one (str/int).
Elf: Range, magic. Elves have the highest dex attainable, combined with the highest dps possible (magnum shot spamming). Elves in my opinion is the best to play if you plan to play until the end game. Elves are a pain in the ass to train at first, but they become great later on. Elves do fall a little behind in fighter and gunner, because of their limited will and str, but these two classes also don't have that much of a damage gap, so Elves will still do fine in these classes.
Now as for the classes races really fall behind in:
Humans: None. They don't excel significantly, but they're not behind either.
Giants: Range. They're so behind in range that they don't even have the skillset/talent. That being said, giants lose huge chunk of dex attainable, and they actually do the lowest damage in puppet. But let's be fair, puppet end game, regardless of race, will still decimate just about everything.
Elves: Melee/fighter. Elves have a whole knight talent missing, a talent that is significant for good amount of str, as well as not getting the same str in certain skills (like combat mastery). If you're planning to do elf warrior, don't. You can do it, but you won't be putting as much damage as you invested. Because of the limited str, Elves also get less gunner damage, but let's be fair again: end-game gunner will still shooting-rush one shot most of the content. Elves get less damage from chain mastery, not to mention less will. This makes them do less damage in fighter, but don't worry, figher is meant for high 1v1 damage, and Elf fighter still does that.
As for other classes, they don't have much differences. For bard, it's gonna be the same for every race.
For alchemist, it could make a bit of diffence, but not that much. If you're going to be a flame alchemist, Giants have the upper hand since they do have thie highest HP attainable (flame burst damage is also affected by your HP). Humans come after, then Elves.
For water alchemist, Elves and Human have the same place, since they have the same mana pool. Giants come in a tiny bit short, but it really doesn't matter, since they're only short of 9 mana. Water cannon gets affected by mana as well, if you haven't noticed.
So all in all, races don't hace much impact on alchemy.
