The more inventory I have, the more I find myself wasting it, holding onto stuff I'll most likely never need and not even properly organising items throughout all my bags.

How would physical size make a difference? Now if you had say a 2560x1440 monitor and probably modded the game to run at that resolution (can it scale that high natively? I doubt it but maybe.) then you would have some free screen space from that fixed-size UI.

Well wouldn't physical size give you more room to put windows or are you saying there's a max resolution it has before it starts to stretch itself? I mean compared to my laptop, I have more size on my screen for windows. If I opened up my character on my laptop it would fill up the entire screen, and maybe not entirely fit on it.

Bigger physical size at the same resolution means bigger pixels. How would a game know how physically big your display is? If you hooked it up to a projector on a 12-foot screen do you think the windows would suddenly become tiny? It just knows the numbered grid of pixels that fill up the selected resolution of your display, and decides which color each of them should be each frame.
UI windows in this game don't scale with resolution, they have a fixed size in pixels. Your laptop is probably running at 1600x900 or less while your desktop is at 1920x1080. That's why it takes up more space on the laptop. Turn your PC settings down to that smaller resolution and it will appear the exact same.

But larger screen does mean larger resolution if your graphics card supports it though. So I stand by my assessment that the screensize matters.
