What is Wine Making?
Wine Making is a profitable side-task implemented with Tara, located in Blago Prarie (the area between southern Tara and western Emain Macha). It is similar to the Farming system in Taillteann, with a couple minor differences...
Instead of 3 separate farming actions - there is only 1 mini-game.
Instead of 10 actions per day - you must play the mini-game once every 23-24 hours.
Instead of a bundle of gold - you receive a heap of experience.
Why Should I bother?
Wine Making, if done properly, can be a pretty valuable resource. Unlike farming, it doesn't take around 3-5 hours to get all your actions done, you can just pop in, spend 2 minutes, then leave. However, it does take between 3-7 days to finish making wine, depending on the quality you are attempting to get.
Depending on the quality of your wine you may receive up to 200,000 experience, though the average quality wine tends be be around 40,000 - 90,000 experience.
Special Shadow Mission passes. These missions provide even more experience, as well as Upgrade Coupons as possible rewards. On average, you will receive 2-3 untradeable passes for your efforts... unless Pencast calls your wine an insult and spits on you.
Protect Corrib Valley

On top of that, there are also two titles available for you to obtain : to get these titles you must make high quality wine, good enough to receive 3 Shadow Mission passes. While they aren't great, there's nothing wrong with adding another show-off title to your collection.
The Wine Hero (Errans Cru)
15 HP, 15 Luck, 1 Defense, 1 Protection
The "Goddess Water" Maker (Grand Blago)
+15 MP, +15 Intelligence, +15 Dexterity
*You may only keep one title at a time, obtaining the other title will disable the one you currently have.

Step 1.
First, you must decide what kind of wine you want to make. Because Lezarro and Eluned are rivals, you can only make one type of wine at a time.

If you want to make Errans Cru, pick 20 Errans Sauvignon from Lezarro's Vineyard and take it to Rumon.
If you want to make Grand Blago, pick 20 Blago Noir from Eluned's Vineyard and take it to Edana.
Once you give Rumon/Edana your grapes, you're done for an entire day.
Step 2.
Replacing the Wine Barrel must be done every day, preferably between 23 and 24 hours after the last thing you did (either start, or replace). Everytime you play the mini-game, several changes take place.
Freshness and Difficulty
Freshness will start to decrease 24 hours after the last barrel replacement, which is why you want to replace the barrels often. However, every time you replace the barrel the next mini-game will increase in difficulty, therefore you don't want to do it too early. 23-24 is ideal, although if you know you can't replace it at that time, you must choose to either do it earlier (and make it harder later on) or later (and sacrifice some Freshness).
Note that Freshness drops at a very high rate of more than 1 per hour.
Acidity and Purity
Acidity and Purity will only change when you complete the mini-game.
Acidity is based on the speed you set the mini-game to. By default the mini-game is set at average speed (50%), however this results in a rather large drop in Acidity (around 45 on the first replacement alone). To get high quality wine, you must increase the speed of the mini-game to the highest setting you can handle. Max setting (100%) will prevent all Acidity loss.
Purity is based on your performance on the mini-game. A flawless game (all bubbles popped, no extra clicks) will prevent all Purity loss, and each mistake you make (missed bubbles, extra clicks) will each subtract 1 Purity.
Each person will have to find the right balance for their wine - preventing Acidity loss will make maintaining Purity harder, while safeguarding Purity will cause Acidity to plummet.
Age
Wine will age at roughly 14 points per 24 hours. Simple enough. Wine will be fully aged in roughly 7 days, which requires 6-7 mini-games for maximum freshness.
Step 3.
After you are happy with the stats of your wine, rush the bottle over to Pencast at the Cathedral and he will either praise your wine and reward you handsomely, or glare at you for the rubbish you hand him. Once that is done, head back to the Vineyards and start a new batch! You can pick from either Vineyard once you have obtained your finished wine.
