Is the "our image" part referring to the angels, multiple deities, or referencing to the fact that "God" is an omniscient being that is a part of everything?
Pretty much the omniscient being answer, since God would have been the only thing in existence before ... well anything. It's a representation of himself, through his creation.
I don't know how much you know about Christian theology, but God's original creation (Adam, Eve, all the animals) was supposed to be perfect.
Adam did not resemble God in the sense of God’s having flesh and blood. However, Adam’s body did mirror the life of God, as it was created in perfect health and was not subject to death.
But, the whole sin against God occurred and mankind lost that perfection.
In conclusion, mankind was originally made in God's image (not necessarily a physical image) but that "image" was lost due to sin. At least, I think that's the best way to explain it.
