At the Monster Hunter Festa ’15 tournament finals in Tokyo today, Capcom announced Monster Hunter Stories, a Monster Hunter RPG spin-off for the 3DS due out in Japan sometime in 2016.
Five years in the making, little is known about the actual gameplay thus far, though Famitsu managed to solicit a brief quote on the game’s overall direction from series producer Ryozo Tsujimoto.
“We want to imbue this game with a storyline and brand of fun that can only be done within the confines of an RPG, while still preserving the core sensibilities that people have come to associate with Monster Hunter,†Tsujimoto said.

I'm honestly surprised the series hasn't had a RPG spin-off yet. Hopefully it just an RPG version of Monster Hunter or close with open world, although a turn-based game would be cool too if they go for a simple approach.

They're not.
They're action games with crafting. There's no leveling just equipment stats.

Character stat growth is, which is why the Souls games and Final Fantasy 2 are RPGs, and leveling is the most common example since that's how tabletop board games did it and of course transferred to the video games that were inspired by them like Wizardry and Ultima.
But in Monster Hunter the only stats you get are from equipment which is not the same thing.
