Complaining about p2w only really matters if you are going to be the top tier of players. Otherwise, it doesn't really matter since there are so much players a lot better than you.
About the only thing this cash shop gives out compared to not cash shopping is just convenience. It's set up sorta like mabi's cash shop in that its mostly just convenience and not dealing with rng bs. In the end people who dont pay will just have to work 10x harder or so to get the same results as those that do pay. In the end the only thing I don't like is the gold buying system they are putting in, while I myself might use it to further my gear I don't really like the concept behind it as its literally buying gold and its not illegal.

I'm really only looking to get a feel for this game, but I feel like test servers would be too unstable, although I'd be able to experience newer content pretty much first.

Unstable about what? There isn't anything unstable about it.
Although, you have to have a founder's pack in order to participate in beta.
You can only play in certain beta period though since it isn't open all the time. I believe there are like a total of 4 beta times, with the next one starting tomorrow.

To be honest, with the amount of effort you would have to put forth to get into KR and get it not too laggy to play you could just get a beta key and play in NA.

This is honestly a good thing, with the amount of content currently released if it was open all the time it would just make people super bored. This kind of bottlenecks the play time and allows it to last longer artificially.

Something I want to point out that I noticed this beta, they removed alot of the OP pay2win items from the cash shop from the looks of it. Not sure what this means for official launch but it could be a good thing considering the bad rep NCsoft has with being pay2win. On the flipside they reduced the amount of items you can buy from the hongmoon coins part of the cash shop (basically the free cash shop) which is kind of annoying....

Well they are having a gold trading system implemented in game like with china. To be perfectly honest thats plenty to keep the game afloat and prosperous for the company, anything more is overkill. However, the gold trading system is probably the most pay2win thing you can implement in a game like this....

CN had the gold trade system and it made it ridiculously hard for non paying players to get ahead without having a dedicated group of people to farm end game content with. Not only that but CN didnt have money dropping from mobs from wat i remember when I played it, yet NA does which will make bots extremely common unless NCsoft has some way to block them...
