Perhaps you could put into perspective for me how much LUK would be optimal as far as mid-game/end-game, so that I could map out what kind of rebirths I should do to achieve that amount?

If you want Luck, then you have to be somewhere between the ages of 10 and 14. Stats you gain from leveling don't stay with you when you RB. Only stats that you get from skills and from books/quests stays with you. Otherwise, a good majority of the game would have reached the cap on stats by now.
So, it's safe to say--given this explanation--that if and when I need LUK mid-game/end-game, I should rebirth to those ages?
Also, I noticed you didn't make mention of HP. While the LUK bonuses from low-age rebirthing are, for lack of a better word, 'temporary'...
Does the HP growth stick with you permanently?
None of the stats that you gain from leveling are permanent. The only stats that carry over are those gained from skills and books/quests. And end game, you'll probably stick with being age 10 because then you can RB every week, meaning more AP for you, and gives the most stats overall compared to being 17-20.

Would a player who has done the 10>11>10 rebirth method (hypothetically) every week for their character have more AP than someone who did the 17>20>17 method every week for their character?
EDIT: By this, I mean, would they have had more AP over time if they were at the same total-level.

Yes they would. The younger you are, the more AP you get when you age.
So 10->11 gets 5 AP while 17->18 gets 2.

I've played Mabinogi very casually over the last few months. And without a doubt, it's much different than most of the MMO's on the net. But even though I've played it for a good while, I still feel like I have no #$%&ing clue what I'm doing. I probably messed up my character from day one.
So, I'm ready to up my game. My metagame, actually. I come to you (Mabination) in hopes that some of you brilliant, experienced players could give this nublet a few nods in the right direction.
Now, I suppose I should help you by telling you the kind of 'Mabi-life' I'm after.
I'm not very PvP-oriented. So in this case, if you're giving me advice, I'm more than likely, 99% of the time, going to play PvE with friends.
I desire making a human melee. And eventually a Paladin, if by chance that's possible being broke (I don't know yet.)
Now, I DID check out the human melee guide in the guides section. While it appears to offer a great deal of information, I'm not well-informed enough to translate it and understand it well enough.
(Kudos to him/her for the information provided, however. I'm sure I'll make use of it eventually.)
ALRIGHT. So, for the real character-developing questions.
Ideally, if I were to choose a human melee, what age should I begin at?
And at age should I rebirth? And which age should I rebirth to?
17-20. Keep rebirthing to 17 and use the free rebirth at 20. The strength bonuses there are the best also. Paid RB could try different ages, but I don't think you do that.

And which should I avoid? Etc, etc. As I'm sure 9001 posters above me will say, you rank windmill and critical hit first. You might get animal taming, but after that you're free for melee.
If I plan on being PvE, do I lose out on any benefits I'd get from PvP?
Or is PvP solely for enjoyment only? PvP is for the lolz only...so no. Except maybe there is the Guild War title that could be useful.

Well, yeah, but Nexon seems to be really clever with making players feel obligated to buy their virtual cash when they're really not obligated at all. (Or maybe it's just me...)
I've played a lot of MMO's, and never fell into a virtual cash 'trap' with any of them. But with Nexon games, it's like, gah.

I try to obtain NX without paying for it, and then I get very little anyway because it's not much worth my time. Just enough for some pets..
Well, if doing the 17>20>17 route is still a decent route (because obviously 10>11>10 is optimal, but yeah, expensive. :x ) I'll do that, then.
I think the only times I'll spend money is when I want a pet, or a mount, or want to Gach a few times, etc.
17>20>17 is something a lot of people do, yes?
Most people do. Simply because it costs nothing.
