Some headphones have a better soundstage than others, which essentially just means the physical construction of them enables better positional sound. If the cups are curved, for example, it's gonna make a different sound than if they're straight because of how sound will arrive at your ear. Done properly, this can create
amazing illusions of actually being surrounded by the sound.
But even with good headphones, it's all over the place and high quality headphones don't necessarily have a good soundstage, and low quality headphones not necessarily a bad one (unless they're
really cheap, almost all of those are bad all around).
But yeah, avoid anything that mentions built-in surround sound. What you're going to be looking for is virtual surround sound which is far more accurate and realistic. This can be done regardless of which headphones you're using.

Well yeah. Any headphone can tell the general direction (I hope), but some do it more clearly than others and some do it differently than others. For example, could you tell if something was 20m to the right of you or 10m to the right of you? This may sound silly, but it can get pretty realistic by comparison when it's accurate. With moving objects in particular, it's possible to close your eyes and know exactly where something is relative to you with the right headphones. Meaning like, you could point to that location and get it every time rather than just in the general direction.
This is not a big deal or something people just listening to music probably care about, but in competitive gaming it's kinda relevant. I know when I wear certain headphones I can't find anything and with others, like the ones I had before they broke, everyone thought I was wallhacking :P
