Yea, I was willing to overlook all of the other technical flaws of Samhain because most generations aren't much better, but that wall you can't see through is really annoying. And as someone with experience with this kind of stuff and mabi specifically, its not too hard for them to fix.

Immortals can be killed. Even the great doctor can die if his regeneration is interrupted. I'm sure the same would apply to the milletian. Other NPCs tried to destroy the milletian's body. Laighlinne knows the nature of the milletian's rebirth cycle and has intention of sacrificing him for her own agenda. I'm sure she knows of a way to end the cycle to that effect.
I wonder if Tuan and Laighlinne are like, half-siblings or distant relatives or something like that.

Obviously because a part about being immortal means being incapable of death.

If you can die, then you are not immortal, you are just long lasting.
There is a difference in definition. Immortality and unaging is two very different things. This is also why we don't call "Eternal Youth" as "Immortality".
Furthermore, it's stated that even if you destroy the soul stream, the Milletians wouldn't die. They will just go back to where they came from because the soul stream is an anchor to keep them within Erinn.
